Wouldn't each user connected to a remote node be required to check all of that new data each time they load up the wallet? If that's the case how is Monero expected to accommodate the vast majority of users who don't have internet and

At the moment, yes. I won't accomodate the world as is. Bitcoin won't either. Improvements will be needed first.

computers and internet get faster over time too
