KYC = Know your customer. Regulated exchanges (and fiat exchanges have to be regulated) need to verify who you are , so will typically ask for picture id and a copy of a utility bill etc

Monero is the most cypherpunk of all the cryptocurrencies, so quite a few will not go through such a process, and instead relying on other ways to buy and sell their crypto. And it is pretty easy to go between Monero and BTC and other cryptos without providing identyfying information - it is just the transition between crypto and fiat that can be a bit tricky

If you do this, it'll guess at a creation height based on your system time. If it's wrong, you messed up. Ohterwise, it should be good enough.
