every crypto has to sync the blockchain but syncing the wallet with the node is an extra step cause Monero doesn't have a UTXO set

and honestly yeah wallet scanning is fine on my beefy desktop but it's pretty annoying on the phone. Recently took my phone a solid 15 minutes to sync 3 weeks worth of transactions over 4G and I've got a not super old quad core

hmm, I think Monerujo at least sort of has this option, it will sync in the background. Cake seems not to offer this. Wonder what the effect of that on battery life is though. Or are you suggesting having users install something like a MyMonero server alongside their node?
