AFAIK it should be quicker if done once

but then docker does some caching, so rebuilding shouldn't take as long in most cases as selsta pointed out

reproducible builds are a web of trust kind of thing, you need to manually verify with multiple people that your build matches those of others

the monero-wallet-gui binary is outdated but the packaging is still done manually
