Did you find out that GUI doesn't support socks proxy during your research?

Also you would have to notice that monero core Wallet API doesn't support configuring proxy at runtime (i.e. you can't change it on the fly once you initialized the wallet)

WalletManager doesn't have proxy support as well (remote node case, of course, you don't need to proxyfy local node connections)

Just in case, i'm coding all this right now. But your Tor embedding plan would have to wait till all this get implemented

because v0.16.0.0 does not understand .dmg and v0.16.0.3 would be .dmg
